Explanation

Formation: Verb stem (ます-form without ます) + やすい/にくい. For example: 読む → 読みやすい (easy to read), 読みにくい (hard to read). The resulting word functions as an い-adjective and conjugates accordingly: 読みやすかった (was easy to read), 読みにくくない (not hard to read).
These suffixes can describe inherent properties of objects (この本は読みやすい — this book is easy to read) or tendencies (彼は怒りやすい — he gets angry easily). やすい can also mean 'prone to' or 'likely to' when describing tendencies: 壊れやすい (fragile/breaks easily).

この漢字は覚えにくい。
がたい means 'difficult' in a more emotional/impossible sense. にくい is the standard N4 pattern for 'hard to do.'
